Monday: Leftover chicken noodle soup or hot sandwiches. Or both, if that’s your pleasure. 🙂 I made a huge pot of soup on Sunday, using a whole chicken ($2.98 at Fiesta), marked down celery and carrots ($.99 total at Foodarama), and onions and garlic for the broth. The noodles, chicken, and fresh carrots for the soup added probably $5 and we’ll easily get 3 meals plus lunch out of it. Why, yes, I do have a huge pot that I use for stock. 🙂
Tuesday: 3 Bean Chili, rice, and cornbread. I have pintos, light red kidney beans and dark red kidney beans that I’ll cook on Monday night. Of course, canned beans are easier, but dried beans are cheaper. I have two big cans of tomato sauce and diced tomatoes that will make up the base of the chili. Cost will be about $6.50, plus the cost of the meat.
Wednesday: Baked chicken, orzo with parmesan and basil, and steamed veggies. Boneless skinless chicken breasts are $1.47/lb at Bravo Rancho so I’m stocking up and we’ll be eating it twice this week. I got the orzo on Amazon for $.80/1 lb and 2 lbs are plenty for us.
Thursday: Leftovers or frito pie, or cold cereal. I’m going to be eating out with my Houston Bloggers so everyone else is on their own!.
Friday: Fish! Baked tilapia, rice and broccoli. HEB had a great deal on the 4 lb bags, and everyone eats fish in my house.
Saturday: Fend for yourself.
