This past weekend was a nice taste of fall. But, we’re back to warm weather this week, so we’re going to be making easy quick dinners at least til we really cool off. This is midterm week for me, so I’ll be enlisting the teenager for cooking assistance this week. Dinner on the table in 30 minutes or less!
Monday: Shrimp with Orzo. I’ve made this before, but this time I want to be able to post it on the blog, so I’m making it again. 😉
Tuesday: Mini Meatloaves with mashed potatoes and broccoli.
Wednesday: Pulled pork in the slow cooker, with tater tots on the side. Baby carrots and celery on the side with MSG free ranch.
Thursday: Sunny Anderson’s Chipotle Chicken Mac and Cheese. I had bought the stuff for this, but I just didn’t make it. I marinated the chicken on Sunday during my meal prep session.
Friday: Fend for yourself
Saturday: Don’t forget my FREE coupon class at the Jacinto City Library! Beef fajitas cooked on the Foreman grill, Spanish rice and beans plus all the taco fixings.
Sunday: Dinner out. I’m declaring a day of Adventure! 😉
