It’s almost my favorite time of year.
It’s also the busiest time for me. Expect to see more posts from me on Facebook and Instagram and less on the blog as I work through my committee commitments at the Rodeo, as well as begin a new job! I do have some things lined up and scheduled, plus I’ll have a fun giveaway in a couple of weeks as a reward for y’all putting up with my absence. But now, on to the good stuff.
My husband observes Lent, so no meat on Fridays. I’m also going back to work (I’ll be at my new job when you read this), so we need quick meals that I can put together after getting home. Things that carry over are also going to come in handy.
Monday: Chicken soup and sandwiches.
Tuesday: Chili, so we can have leftovers.
Wednesday: Chili mac or Frito pie.
Thursday: Chicken, mashed potatoes, and mixed veggies.
Friday: Tilapia baked with citrus, rice, steamed broccoli.
Saturday: Freezer meal or fend for yourself.
Sunday: Rodeo walkthrough for me, so it’s dinner out.
