School, school, back to school. My two Js start back to school on Tuesday. I want to make meals that are ready quick, easy to turn into lunches, and being budget friendly would be a bonus, too.
Not that I’m asking a lot, or anything.
Here’s what I have in mind this week.
Monday: Chicken broccoli pasta with smoked mozzarella and sun dried tomatoes. Sounds super fancy, but that title is pretty much the whole ingredients list. I always make a ton and it’s fabulous the next day as well.
Tuesday: The first day of school, so we’re having leftovers or something else easy because I know my hand is going to be cramping from filling out the same information. Twice. Even though both my kids are returning to the same school.
Wednesday: Pulled pork in the crockpot. I will cook this low and slow on Tuesday so that it will be ready. Served on Hawaiian rolls with french fries and pickles on the side.
Thursday: Taco Thursday.
Friday: Pizza night!
Saturday: Fend for yourself.
Sunday: Dinner out.
