As usual, this is just a plan, not set in stone. Lunches are usually sandwiches, frozen burritos, or a box bowl of cereal.
Meat prices are jumping on me. We’ve eaten almost all of the meat from my very well stocked freezer, and now I’m at the mercy of market prices, which I hate.
Monday: Pulled pork sandwiches, french fries, and corn. Easy and reheatable. Cost: $7 for pork shoulder roast, $2 for buns, $1.00 for homemade french fries, and $1 for corn – $11 total.
Tuesday: Spicy Pinto Beans and rice and cornbread. It’s supposed to rain this week, so it’ll be nice and nicely budget friendly. Cost: $3 for beans, $1 for rice, $2.50 for sausage, and $1.50 for cornbread from scratch – $8 total.
Wednesday: Steak Sandwiches ala Pioneer Woman, plus homemade mac and cheese. Yes, sandwiches twice in one week, but I think it will be worth it. I got steak on sale at one of the neighborhood stores for $2.78/lb. I can’t get good ground beef for that. Cost: $5.50 for meat, $1 for bolillos, $1.25 for the pasta and $2 for the cheese – $9.75 total.
Thursday: TGI Friday’s Sizzling Parmesan Chicken, mashed potatoes, fresh green beans. Cost: $5 for chicken (2.5 lbs @ $1.99/lb), $1.50 for homemade mashed potatoes, $1.50 for fresh green beans, $1 for misc – $9 total.
Friday: Fend for yourself.
Saturday: Another easy day.
Sunday: Grilling day.
