Next month, I’m going to give a monthly meal plan a go.
Monday: Tuscan Pasta with Tomato Basil Cream Sauce – adapted a bit, since I have a jarred tomato alfredo sauce and don’t cook with wine. I’ll also saute a couple of chicken breasts to add some additional protein. Cost – around $10.
Tuesday: Ranch Crockpot Pork Chops, made without the cream soup. Potatoes are $1.98/10 lbs, pork loins were $1.99/lb, so I can make this one for probably close to $8.
Wednesday: Enchilada casserole, maybe? More beans, more meat, etc. And low fat cheese is a sin. Corn tortillas are cheap here, and I have some canned beans that were $.29/each at Food Town. Always rinse your canned beans. They’re kinda icky otherwise.
Thursday: Citrus Chicken and Rice. This one will totally be on the fly. I have lots of limes and lemons that I got for cheap at Foodarama, and chicken is always a winner in my house. Cost will be probably close to $7, but I won’t know till I throw it all together.
Friday: Fend for yourself, or leftover buffet. If there’s no leftovers, I might make this bacon noodle casserole. Bacon makes everything better.
Saturday: Soup and Sandwiches if it ever gets cool.
Sunday: Request night.
