Hello, everyone! Welcome to this week’s Menu Plan Monday! We are starting to move into cooler weather, which means my crockpot will be getting a workout. You gotta love that bipolar Texas weather!
Monday: I have a busy day planned. There are bills to be paid, floors to be mopped, and posts to write. Dinner has to be quick tonight. Tilapia, rice, and broccoli takes no time to get ready, and is family approved. Plus, I’ve got everything already.
Tuesday: Tuesday is my favorite day to buy ground beef. The Fresh Market has it for $2.99/lb for freshly ground chuck. So, we’re going to have meatloaf muffins, scalloped potatoes and mixed veggies.
Wednesday: The weather is supposed to turn quite chilly here in Texas, so I’m thinking soup. Either potato soup or a copycat of Olive Garden’s Zuppa Toscana. I bought a 10 lb bag of potatoes for $1.99 from Sellers Bros and I need to use them up.
Thursday: More soup or maybe a green chile stew. I haven’t decided yet, and it may depend on what looks good when I go to the store.
Friday: Fend for yourself day or Eat All the Leftovers day. I’m gearing up for tomorrow…
Saturday: FINALLY it’s lasagna day! This is an all day process for me, because I make a TON of it. I use all the spaghetti sauce I’ve stocked up on, canned tomatoes from the sale at Kroger, and hopefully I’ll find some cheese on sale this week. Just call me Garfield because I LOVE lasagna.
Sunday: Leftover lasagna.
