I have a confession to make…
My shelves are full.
There is no more room.
And Kroger is having another Mega Event, starting Wednesday. Which means I need places to put new stuff.
I’m doing a lot of pantry organizing and inventorying this week. My challenge this week is to spend less than $10 out of pocket for 7 dinners to feed 4 people.
Monday: Chicken Enchilada Casserole. We had fajitas last night, and I need to do something with the leftover chicken. I have enchilada sauce in the pantry, and corn tortillas are under a dollar. Easy peasy.
Tuesday: Leftover beef fajitas turned into steak quesadillas or nachos. I don’t remember having so many leftovers when my oldest was still at home. 😉 Zero out of pocket.
Wednesday: It’s the start of a new mega event at Kroger! I know I want to make several trips, or one big one, so dinner will be something easy. It’ll depend on what I find at the store. If all else fails, it is breakfast for dinner. We have eggs, bacon, potatoes, and biscuit mix.
Thursday: I’m making a big pot of red beans and rice. We’ve got the red beans and rice in the pantry, as well as some cornbread mix. All I need to add is some sausage, so $3.
Friday: Lasagna roll-ups. I have everything except ricotta for this, and that’s about $3.50. Hoping I find some on markdown.
Saturday: Leftovers.
Sunday: Fend for yourself. We have all kinds of freezer junk food.
