It’s that time again! Back to school time! YAY!
It’s the Food Stamps Challenge week 3 edition of Menu Plan Monday! As usual, this is just a plan, not set in stone. Lunches are usually sandwiches, frozen burritos, or a box bowl of cereal.
Monday: Super Nachos! We’re using leftover fajita meat, guacamole, pico de gallo, cheese, and sour cream to create either tostadas or nachos. – Cost – Leftovers! Minimal cost so around $6 of food that we already had?
Tuesday: I’ll be playing around with this recipe as a base, and use some of the roasted bell peppers and maybe a hatch pepper in the mix. Instead of orzo, which we don’t like, I’ll be using a twirly pasta, I think. Cost – $5, maybe? I’ll update when I actually make it. 🙂
Wednesday: Crockpot Beans with hamburger meat and rice. Cost – $5
Thursday: Green chile chicken enchiladas. Cost – $8?
Friday: Fend for yourself. Pizza and taquitos were cheap at Randalls so we’re going to have a freezer buffet or leftovers.
Saturday: Another easy day.
Sunday: Grilling day.

None of our portions are tiny, and my goal is to spend no more than $10 per meal. For the next month, I’m trying to keep my total budget for food under $500.
