This is the “Mom’s going out of town” edition of Menu Plan Monday! I’m headed to Bloggy Boot Camp in Dallas this week, thanks to sponsorship from Champion Chevrolet, and my kids and husband are on their own for dinner for two whole days! I better feed them up right before I get on the road!
Monday: Jalapeno Popper Chicken. I like jalapeno poppers, I like chicken. While I don’t do fat-free or reduced fat cheese, I think we’ll balance out the cream cheese and cheddar with a healthy salad and some mixed veggies. Cost on this should be right about $8.
Tuesday: Tuesday is open house at Jamey’s school, so dinner will be quick. Tacos, beans, and yellow rice. Cost is usually about $8, but I may need to bump it if no one puts Casa Fiesta beans on sale soon!
Wednesday: Beef and broccoli, one of my husband’s top five meals. It’s not a budget meal, but I’ll make up for it later in the week.
Thursday: Pulled pork sandwiches, fries, and salad. Cost for one pork loin, two bags of fries and salad is about $10, but we’ll eat on it twice. They’ll eat on it twice. Oh, it’ll all get ate. 😉
Friday: Leftovers or fend for yourself. I bought a few of the Birds Eye meals last week at Kroger when they were half off. Now, it takes 2 of them to feed everyone but we also have frozen pizza and lots of junk food.
Saturday: Coneys and potato chips. Easy food for the last day before I come back.
Sunday: Grilled chicken or fajitas.
