I hope everyone is over their candy hangover! It was also “Fall Back” on Saturday night, so I am glad we were already planning on a low key Sunday. From now until Thanksgiving, I have a ton of assignments and 4 research papers due, so we’re still pretty busy. This week, I am planning my meals even earlier on Saturday night, which is definitely helping me keep our budget on track. I don’t want to alarm anyone, but we are only four weeks away from Thanksgiving! Sales are going to start soon for typical Thanksgiving foods. Keep your eyes open and your printer ready.
Monday: Red beans and rice in the slow cooker, with cornbread on the side. Sausage also on the side for the meat eaters. Before cooking red beans in the slow cooker, they MUST be boiled first.
Tuesday: Leftover beans and rice.
Wednesday: Shrimp alfredo, made with frozen shrimp and jarred cream sauce and quick cooking pasta. Serve with salad and garlic bread. When you absolutely, positively have to get dinner on the table in 20 minutes.
Thursday: Pork tenderloin with roasted cauliflower, broccoli, and potatoes. Super Veggie Girl will have a vegetarian substitute.
Friday: Pizza or freezer snack night.
Saturday: I’m going to be experimenting at Dream Dinners with my buddy Wendy during the morning. I am looking forward to some great tips. 😉 However, Saturday is fend for yourself day.
Sunday: Depending on weather, it might be lasagna, chicken enchiladas, or dinner out.
Here’s my grocery list. You’ll notice that most of it is fresh fruits and veggies and very few pantry items. I’m publishing it this week for a little accountability. If I shop my house first every week, my list should be short.
