Monday: Leftover tuna salad. Private Selection eggs at Kroger were cheaper than store brand eggs (when you buy 4). Eggs last so long in the fridge, I’m tempted to go back for more. Starkist Tuna is $.50/ea at Randalls, so I made a big batch of tuna salad.
Tuesday: Chipotle chicken mac and cheese pasta. I watched Sunny Anderson make this and I was in love. Instead of four cups of heavy cream, though, I’ll be using two cans of evaporated milk, and 8 oz of heavy cream for both calorie and cash savings.
Wednesday: Sloppy Joes and tater tots. I picked up some Manwich at Randalls. What can I say? It’s comfort food and it’s cheap. 😉
Thursday: Breakfast for dinner. Sometimes this is a quick egg scramble, sometimes, it’s pancakes and bacon. Just depends on what kind of mood I’m in.
Friday: Pizza night.
Saturday: Fend for yourself.
Sunday: Green chile chicken enchiladas.
