Well, hello everyone! For the past six weeks, my house has been a mess and so have I. Y’all, a remodel in the fall was not in the cards. But, we’re on the home stretch for the living room, and I’ve got some exciting things coming up.
My old crockpot took a flying leap off of the refrigerator and I replaced it on Sunday thanks to this deal. I probably don’t NEED a 6 quart slow cooker, since my oldest is off at college, but the habit is hard to break. Plus this one was a great deal. I’m ready for colder temperatures, and I think this week is reflecting that.
Monday: Slow Cooker Pulled Pork sandwiches, served with pickles and french fries. This time, I’m going to cook the pork and add barbeque sauce after so that I can use the rest of it in another dish.
Tuesday: Meatloaf muffins, mashed potatoes and broccoli with cheese.
Wednesday: Tilapia, rice, and mixed veggies.
Thursday: Homemade Cuban sandwiches, with the seasoned pork loin, ham, swiss, and pickles. I’ll use my George Foreman grill to toast them.
Friday: Leftovers or freezer food.
Saturday: Green Chile Chicken Enchiladas, served with yellow rice and beans.
Sunday: Undecided.
