TGI Friday’s Sizzling Parmesan Chicken is about my favorite thing on the menu. I substitute mashed potatoes for the pasta it comes with, but this is what I order when we play trivia. Here’s my knock-off copycat recipe.
Other needs:
An oven safe skillet like cast iron or stainless steel
In advance:
Wash, deseed and dice tomatoes to 1/4-1/2″ pieces, save juices and place in small bowl. Cut basil leaves into thin strips (chiffonade). Combine tomatoes, basil, 2 tsp olive oil, salt, pepper, and minced garlic and hold for 2 hours before use.
Preheat the oven to broil or as high as it will go. Cut breasts in half length-wise and season. Combine panko, parmesan, parsley and a bit of seasoning and set aside.
Heat the skillet and add butter and 2 tbsp oil. Brown the chicken on both sides, but leave one side slightly lighter. Then spoon a little bit (about 1/2 tbsp) of dressing on the chicken and top with the panko/cheese mixture.
Broil till chicken is done and topping is crunchy. Serve with mashed potatoes or your favorite side.
